Pitt State grad ready to roll out Salsa Burrito soon

Burritos are coming back to Broadway! Pittsburg State University graduate Darrell Pulliam, who last year bought Brick + Mortar and the empty restaurant space next door formerly known as Juicy’s, is reopening the former burrito joint as Salsa Burrito in coming weeks. 

“The banner has gone up on the front façade, we’re working on getting our menu set and our kitchen in order, and then will be training our staff,” said Pulliam (BST '90). 

Both restaurants are part of Block22, an innovative living-learning community that Pittsburg State University, the City of Pittsburg, and Vecino Group partnered to open in four renovated historic buildings at Fourth and Broadway in the heart of downtown Pittsburg in 2019. 

The name Salsa Burrito is a nod to both the style of food and Pulliam’s favorite bike, a Salsa Cutthroat that he has ridden thousands of miles. 

Pulliam grew up as a winning BMX racer and throughout high school and college, from 1979 to 1989, represented national brands across the U.S. at the pro level. In 2017, he was inducted into The Kansas BMX Hall of Fame in Wichita. 

In more recent years, he’s been a mountain biker and gravel rider and advocated at the regional and state level for bike trails and cycling pathways. He also works for Pittsburg State University in the University Strategic Initiative division as the economic development director. 

Salsa Burrito, located in the historic Baxter Building at 401 N. Broadway Suite A, will be decorated in bike-themed photos and nostalgia. It will be open for lunch 11 a.m. to 2:30 p.m. Monday through Saturday. It will have some indoor seating and will offer grab-and-go orders.  

The menu will include burritos and bowls made from all fresh ingredients prepared in the kitchen each day. 

“We're excited to add another restaurant to the Block22 family of businesses and have one more additional quick and tasty lunch option in downtown Pittsburg,” Pulliam said.
